Avocado Egg Cups


The last project we did was a divine Avocado body butter. To see how to make it, click here. From the body butter project we had some beautiful ripe Avocado left over and didn't want it to go to waste, so we decided we would make something delicious from it instead! These Avocado egg cups are delicious and so quick and easy to make. A great snack for any time of the day!

Preperation: 10 minutes - Cooking time: 20 to 30 minutes - Serves: one

Ingredients:
1 large egg
1 large avocado
1 bacon slice
5-6 cherry tomatoes
1 onion chive stick
Salt and pepper to taste

Directions:
Preheat oven to 190ÂșC. Dice bacon and fry until slightly crisp.
Slice Avocado in half length ways and place on a baking tray. If you would like, you can slice a TINY bit of avocado off the rounded end of the vegetable, just to make the Avocado lie flat on the tray, but if you do this, make sure that you don't slice a hole in the Avocado.
Remove the pit and scoop out a small amount of avocado from each half to deepen the holes.
Dice cherry tomatoes and chives.
In a bowl, beat together egg, tomatoes, chives and bacon until thoroughly mixed.
Evenly pour mixture into two halves of Avocado and sprinkle salt and pepper on top.
Bake for 20-30 minutes until eggs reach desired doneness. Serve while warm.
